Believing that 70% of a coffee's deliciousness is determined by the roasting technique, Mel coaxes out exceptional flavors using a pair of meticulously restored, customized cast-iron machines: a 1968 Probat L5 and a 1960 Probat UG15. Their roasting philosophy centers entirely around showcasing pure, transparent terroir. Working exclusively with clean, non-infused lots, Mel allows the unique variety, origin, processing method, and producer's craftsmanship to speak entirely for themselves in every single cup.
