A Colombian espresso crafted by Wilton Benitez, sourced from the legendary Granja Paraiso 92 in Valle Del Cauca. Here, the red bourbon is processed using an experimental approach, notably with controlled washed fermentation, which enhances the aromatic expression while maintaining a clean and precise balance in the cup.

As an espresso, the profile opens with a very expressive violet, then reveals a dense and slightly tart cherry liqueur sensation, before lingering on a deeper dark chocolate note. A cup that is at once floral, liqueur-like, and structured, where fermentation adds complexity without masking the character of the variety and terroir.
