    At Finca Milan, innovation is not an end in itself. Each fermentation protocol is developed to unlock an already existing potential. NG coffee, or New Generation coffee, perfectly illustrates this idea.

    Located in the Risaralda region, the farm is now recognized as one of Colombia's leading centers for precision fermentation. Cultivation protocols developed there rely on a perfect mastery of microbiology to obtain clear and complex aromatic profiles.

    For this NG batch, the cherries are harvested at peak ripeness and pulped. Fermentation then takes place using a selected culture of yeasts and bacteria, developed directly on the farm. This culture is maintained with a substrate composed of fruits, aromatic plants, and local spices, allowing the fermentation to be guided without compromising the coffee's unique character. This stage, depending on harvest conditions, generally lasts between 5 and 10 days before washing and a slow, controlled drying process.

    The NG captivates with its aromatic finesse. The initial notes evoke orange blossom and rosewater, before giving way to fresh, juicy raspberry. The cup is delicate, floral, and exceptionally graceful.
