Behind this Zero Fermentation Washed, Alo seeks to eliminate a step that has become almost indispensable in modern washed wines: fermentation. The ripe cherries are sorted, pulped, and then washed immediately, without any time spent in tanks. The objective, simple in appearance, is very demanding in practice; it's essential to prevent fermentation from shaping the aromatic profile and to allow the variety and terroir to express themselves with as little interference as possible.

The cup opens with an airy texture, revealing an initial note of white tea on the palate. This is followed by cherry, fresh and tangy, almost jammy. As the tasting progresses, the acidity becomes more precise, evoking a lemon candy. A transparent, delicate, and precise coffee.
