Process: Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry for 24 hours. De-pulped. Dry-fermented for 48 hours. Washed. Dried on raised beds until moisture content reaches 10.5%.

We started focusing a little more on the region of Santa Maria in Huila last year. Guiliar Cuéllar is a new producer for us, and we are eager to see this region continue to grow. In the cup we find lemonade, fresh blueberry, and subtle florality.
ABOUT GUILIAR PÉREZ CUÉLLAR
Guiliar has spent most of his life working on coffee farms, and a few years ago was able to save enough to purchase his own. He began by buying a small plot from his father-in-law and an adjacent parcel, immediately planting 1,000 Pink Bourbon trees and dedicating himself fully to producing specialty coffee.
ABOUT PINK BOURBON
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
