Process: Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry for 24 hours. De-pulped. Dry-fermented for 48 hours. Washed. Dried on raised beds until moisture content reaches 10.5%.

This is the second harvest pass that we have purchased from Guiliar Cuéllar this season. He is an inspiring new producer who has now produced two exceptional lots. In the cup we find lemonade, hibiscus, and mulberry.
ABOUT GUILIAR PÉREZ CUÉLLAR
Guiliar has spent most of his life working on coffee farms, and a few years ago was able to save enough to purchase his own. He began by buying a small plot from his father-in-law and an adjacent parcel, immediately planting 1,000 Pink Bourbon trees. It is a story we find deeply motivating, and we are excited to see how his coffee continues to develop.
ABOUT PINK BOURBON
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
