This is our first time featuring a coffee from the Nensebo Refisa washing station. This coffee is floral and stone fruit forward, reminding us of black tea and peaches.
In the cup
We taste intense florals reminding us of black tea, stone fruits like plums and peaches, and delicate citrus that reminds us of lemon tea. This coffee has a light body.
About The Producer
SNAP Specialty Coffee is a coffee collective in Addis Ababa. The company runs three coffee washing and processing stations in Chelelekty, Kochere District of the Gedeb Zone and partnering washing stations in Uraga, Guji, and Nensebo. These washing stations allow local outgrowers to process and export their lots worldwide.
Processing
Coffees in the Nensebo Refisa lot are cultivated in Roricho, Bulga and Solena. Each farmer brings their cherries to process at the washing station where they are picked and floated for defects, washed, soaked for 5 hrs, fermented for 72 hours and dried on raised beds for 9-11 days until they reach final moisture of 10.5%. Nensebo is a new coffee growing area in the West Arsi Zonal Administration which also borders the Bale Mountain on the South. Refisa is a village located within Nensebo Woreda.
Variety
This particular lot has Wolisho and Dega varietals which stem from Ethiopian Heirlooms. Heirloom is an umbrella term that refers to all the coffee varietals endemic to Ethiopia. Believed to be the birthplace of coffee, the trees have been growing and cross-breeding for centuries in this country. As a result, there are now numerous sub-varietals with some common genetics but slightly different behaviour and taste. In the last few decades, there has been an organized effort to research and identify different endemic varietals growing in Ethiopia by name, disease resilience, and yield production.
