From SEPTEMBER
Moonlight is milk espresso comprised of a Natural Pacamara lot from Nicaragua. This offering showcases a well-rounded profile with jammy sweetness and balanced acidity. This coffee was roasted as a milk espresso, resulting in a balanced, sweet and vibrant espresso or filter that also pairs well with dairy.
In the cup
In the cup we get decadent chocolate and a rich fig sweetness. This coffee has a medium body with a long cashew-like sweetness in the finish.
About The Producer
Finca La Bendicion is located in the Dipilto-Jalapa mountain range in Nueva Segovia, Nicaragua and consist of 105 acres planted with coffee. Of those 105 acres in coffee, Luis Alberto, the manager, grows the a handful of varieties, like Caturra, Red Catuai, Hybrids, Villa Sarchi, Pacamara, Maracaturra, H-3, Marselleza, SL-34 and Java. Finca La Bendición has a loose sandy soil, with abundant humus and has an annual rainfall of between 1,400 and 1,600mm. Luis received 6th place in the COE this year, 3rd place in the COE in 2022, 6th place in 2021, 1st place in 2020, 1st and 5th place in 2018, as well as 3rd and 13th place in 2017…. he is no stranger to producing exceptional coffees!
Processing
The care and processing that goes into every lot is second to none, with careful detail at every stage. The coffee undergoes careful picking before being floated and taken to Beneficio Las Segovias to be laid on African beds to dry for between 25-30 days.
Variety
Pacamara originated from a cross between Pacas, a natural mutation of Bourbon, and Maragopipe, a natural mutation of Typica. Pacamara thrives in higher altitudes, producing exceptional cup quality and profiles. The beans themselves are very large, contrasting the compact stature of the coffee cherry plant they originate from. Unfortunately, this variety is highly susceptible to coffee leaf rust.
