Café Uba: A Colombian Coffee Producer Group
Based in Risaralda, Colombia, Café Uba brings together farms including La Riviera and Milán. Through the cultivation of distinctive varieties and ongoing research into processing, the group produces coffees that have also appeared in international competitions. This lot comes from La Riviera in Santa Rosa de Cabal.
A favorite among our team at the cupping table, this coffee brings together the kinds of flavors that are especially popular at LiLo. It is a lot our head roaster, Keita, selected with confidence.
Sudan Rume: A Variety with Roots in South Sudan
Sudan Rume is a variety with roots in South Sudan. Its background differs from varieties commonly cultivated in Colombia, and it is valued for its distinctive flavor character. La Riviera has been growing this variety for many years.
In this lot, tropical fruit flavors led by mango meet the gentle sweetness and acidity of apricot jam and peach. A smooth, rosé wine-like finish follows, offering plenty to explore from the first sip through the lingering aftertaste.
Washed-Bio: Bringing Out the Coffee’s Character
This lot uses a process called Washed-Bio. Yeast native to the farm is combined with a bioreactor—a vessel that allows close control of fermentation conditions—to bring out the coffee’s inherent flavors.
After pulping, the coffee is inoculated with yeast and fermented while temperature and acidity are monitored. Washing and drying follow. The aim is to express the character of the variety and its growing environment more clearly through fermentation. It is an approach that reflects Café Uba’s dedication to exploring Sudan Rume’s potential.
