      Roaster's Comment

      For this year's Natsu Ake, we blended coffees from Brazil, Kenya, and Honduras.

      At the heart of this blend are two coffees with contrasting characteristics. The Brazilian coffee brings gentle sweetness with mellow acidity, while the Kenyan offers vibrant acidity and a juicy mouthfeel. Together, they form the foundation of this year's Natsu Ake.

      The sweet notes of raspberry and almond chocolate from Brazil are layered with the lively acidity of red berries and cassis from Kenya, while the Honduran coffee adds a gentle note reminiscent of unshu mandarin. The result is a beautifully layered and well-balanced cup.

      One of the most interesting things about this year's Natsu Ake is how much its character changes depending on the coffee's age and your grind setting. Different brewing approaches highlight different flavours, giving the blend a wide sweet spot and plenty of room to experiment.

      As always, we've carefully adjusted both the blend ratio and roast profile so it also makes a delicious cold brew.
