From HATCH
In 2008, Jamison and Leslie Savage moved their family to Panama to establish Finca Deborah, an extreme-elevation farm dedicated exclusively to cultivating rare Geisha coffee. Pioneers in flavour innovation, the Savages were among the very first producers to commercially introduce Carbonic Maceration to the specialty coffee world.
Located at extreme altitudes above 1,900 masl in Volcan, Chiriqui, Panama, Finca Deborah is one of the world's most remote, shade-grown coffee estates. Shrouded in dense rainforest cloud cover for much of the year, its nutrient-dense volcanic soil and cool mountain nights slow cherry maturation—concentrating natural sugars and deepening flavor complexity. This high-altitude sanctuary consistently yields world-class lots like "Umbra," captivating coffee connoisseurs globally.
“Umbra” is an extended, cool-climate, shade-dried natural process. Over a 35+ days period, the cherries dry slowly under controlled lower temperatures, allowing the grain to absorb more of the fruit’s natural sugars, character, and complex flavour essence.
