What is left to be written about Cafe Granja La Esperanza’s Sudan Rume that we haven’t already written? Volumes dedicated to it, tomes full of gentle poems of longing and love. I actually heard once that one of the judges during Lex’s WBC run was so touched by his love for Sudan Rume that he went on to become a lead animator at Pixar and created a heartfelt homage to this love, eventually serving as the opening 7 minutes to UP. Check it out, it’s really sweet. 

Anyways, on to some technical stuff. We just had the washed version of this coffee, and before that the natural, and now we come in here saying shit like “hybrid washed” and I know some of you think I’m making that up. Well I have bad news for you, skeptics– everything is made up. But that doesn’t make it meaningless. Meaningless is the time I wasted in therapy. Hybrid washed means something for real. For this lot it means after harvest the cherries start first with a 14 hour open-tank fermentation, before undergoing a further 18 hour fermentation in an oxygen-free environment. After this fermentation stage the coffee is depulped, fermented aerobically again, then washed and dried. Hybrid washed is the shorthand way of saying “kind of a complex fermentation, but ultimately washed.”
