Degassing: We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark. Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.

Hand-carried directly from Costa Rica by Jonathan himself and cultivated exclusively for us at Corpachi Farm, this lot represents a true, intimate collaboration between exceptional terroir and dedicated craftsmanship.
Honoring the Structure Given the coffee’s delicate yet remarkably dense bean structure, we carefully evaluated our approach and chose to revisit our signature 2021/2022 roast profile. This specific methodology was intentionally revived to perfectly honor and unlock the intricate complexity hidden within this unique cultivar.
The Cup Profile In the cup, this coffee boasts a refined, sparkling wine-like acidity. It serves as a vibrant, living expression of both the farm and the cultivar—delivering a brilliant opening of crisp star fruit and delicate honeysuckle aromatics, before gracefully rounding out into a lush, lingering mango-like sweetness.
