They take pride in sourcing terroir-driven, peak-harvest, classic-process coffees, and in employing a roasting style that highlights exciting, layered flavors and each coffee’s natural complexities. Their dedication to specialty coffee is reflected in their omni-roasting approach, designed to enhance the distinct characteristics of each terroir, regardless of brewing method—whether pourover, espresso, AeroPress, or French press. They also implement meticulous green-bean sorting prior to roasting, using an advanced system equipped with an AI deep-learning module and high-resolution dual cameras. This technology ensures that nearly 100% of crucial defects—such as insect damage, fungus, or stones—are removed before roasting.
