    In the highlands of Mangshi, in Dehong, red coffee cherries are harvested at perfect ripeness between 1,600 and 1,800 meters above sea level, then carefully sorted by hand. The processing is carried out by Olina Caicai and her team at a local facility, where each step is meticulously executed.

    The selected cherries then ferment for 7 days in anaerobic tanks at 20°C, with the addition of a patented yeast strain that enriches the aromatic profile. Following this controlled fermentation, the cherries are washed with mountain water and then slowly dried on raised beds for 15 to 30 days.

    The cup reveals a floral profile dominated by rose, accompanied by hints of lychee, a touch of honey, and a delicate echo of oolong tea. The texture is silky, carried by a light acidity, for a coffee that fully expresses the richness of Yunnan's terroir and the meticulous expertise of Olina Caicai's team.

    Founded in 2021 by Olina Caicai (Yatong Cai), Project One Light is an initiative dedicated to promoting Yunnan coffee.

    Based in the heart of the province, the team brings together local Q-graders, transformation experts and committed traders.

    Their mission is based on ethical practices, producer empowerment and careful environmental management, in order to guarantee consistent quality and a sustainable supply chain.

    POL aims not only to offer exceptional coffees, but also to support small producers who have historically been invisible on the international market.

    The project highlights remote villages, hidden micro-terroirs, and little-known traditional skills, opening new perspectives for rural communities in Yunnan. The goal: to build a fairer, more diverse, and more human representation of coffee from this unique region.
