Located in the Cedrobamba region, one of the highest in Peru, Hugo Pareja's terroir pushes the boundaries of coffee cultivation with his Inka Rumi farm, perched between 2,300 and 2,500 meters. Nicknamed "Coffee on the Rocks" because of its massive rock formations, the farm benefits from fertile volcanic soil and natural shade, restored through the planting of native Peruvian trees.
This exceptional batch showcases the SL9 variety, a rare lineage with a unique history. Long cultivated on the Peruvian mountaintops under the name "Geisha Inka" due to its floral elegance, recent DNA analysis has revealed its true identity: an ancient variety of Ethiopian origin, closely related to the Kenyan selections of Scott Labs. Here, on the heights of Finca Inka Rumi, it finds a unique and mysterious Peruvian expression.
To enhance this batch, producer Hugo Pareja chose a meticulous fermentation process: a 36-hour Dry Honey.
The perfectly ripe cherries are picked and then sorted by flotation to remove any unripe or damaged beans. Once sorted, the cherries are pulped and placed in clean fermentation tanks where they rest without water, in their own mucilage. The cool climate ensures the stability of this process, while this dry fermentation method significantly reduces environmental impact by limiting water consumption. After this stage, the coffee is thoroughly washed.
This preparation enhances the natural sweetness of the bean while imparting remarkable aromatic depth. In the cup, the experience is characterized by a beautiful clarity and gentle acidity. Notes of citrus and white flowers emerge, carried by a silky texture that evolves into the lusciousness of tropical fruits. The finish, remarkably smooth, is reminiscent of panela.
