The cherries, harvested at perfect ripeness, are pulped and then co-fermented with Jamaican hibiscus flower during the fermentation phase, before being carefully washed and slowly dried. This method allows for a natural infusion of floral aromas while preserving the purity and liveliness characteristic of a washed coffee.
