This batch comes from the Potosí farm, one of the jewels of the renowned Granja La Esperanza. Under the direction of Rigoberto Herrera, a pioneer of specialty coffee cultivation in Colombia, this farm is recognized worldwide for its quality.
Grown at altitudes between 1400 and 1850 meters, this Red Bourbon was produced using the Honey process. This method, which preserves the cherry's mucilage during drying, results in intense sweetness and a syrupy texture.
In the cup, this profile reveals itself through a dense and balanced structure. The extraction magnifies the roundness and acidity of the red plum, supported by a smooth caramel sweetness. The tasting concludes with a persistent dark chocolate finish, offering a rich, powerful, and fruity initial taste.
