    This lot comes from the TOM plot of the Mima Estate farm, located at an altitude of 1,820 meters in a mountain depression on the slopes of the Barú volcano in Panama.
    The coffee trees grow there in the shade of the surrounding secondary forest, benefiting from a cool and humid microclimate that promotes a slow and even ripening of the cherries.

    The harvest took place on January 29, 2025.

    The ripe cherries were hand-picked and then float-sorted to retain only the densest, before being dried in a greenhouse on raised African beds.
    After an initial four-day drying phase, they were placed in GrainPro bags for two days for slow, low-humidity fermentation, then dried again for 30 days.
    This hybrid process, combining controlled fermentation and extended drying, gives this coffee a deep, smooth, and balanced cup.

    On the palate, there is a bright fruitiness of strawberry and cherry, an elegant floral note of jasmine, and a tropical sweetness of guava.
