In 2024, we were fortunate enough to bring coffees from producer Tamiru Tadesse to Europe for the first time. Thanks to his expertise in processing, each coffee bears its unique signature: complexity, clarity, and fruitiness. This batch is a prime example, with a cup structure that leaves us speechless.
The cherries, harvested at perfect ripeness, are carefully pulped before undergoing a 48-hour dry fermentation, followed by a 3-hour soaking in lukewarm water, a rare method that accentuates the clarity and aromatic depth of the coffee. Drying is carried out slowly on shaded African beds, until an ideal humidity level of 11% is reached.
In the cup, this coffee stands out with its brilliant aromatic complexity: lively notes of candied lemon, a floral sweetness reminiscent of honey blossom, and a subtle length on the palate reminiscent of black tea. An elegant and luminous cup, a reflection of Alo Coffee's artisanal expertise.
