We visited Lubier Beltran’s farm with our importing partner Quest back in 2022. The farm was beautiful and it was clear that Lubier is passionate about specialty coffee production. So, we were very excited to find out that Lubier’s coffee was separated again this year and even more excited to find that his has made a marked improvement in cup quality! Lubier’s farm, Finca La Tijuana, is located in Palestina, Huila. It consists of five hectares of which 3 are planted with coffee. The other two hectares are kept as a natural reserve. Lubier has been around coffee production his whole life, learning from his parents and helping them with every task he could. In 2020, after getting married, he purchased La Tijuana for him and his wife to live on.
Of the many growing regions in Colombia, the mountainous department of Huila in the south west of the country grows the most coffee. Huila enjoys a wide diversity of micro-climates, temperatures, altitudes and coffee varieties. In fact, coffee is grown in 35 of Huila's 37 municipalities. All of this means that the coffee coming out of this region is as diverse as the variables that influence its production.
Pink Bourbon
Initially thought to be a natural hybrid of Red and Yellow Bourbon, this variety, famed for its characteristically pink ripened cherries and equally unique flavour characteristics, has become highly sought after. It has now been genetically confirmed that Pink Bourbon is in fact an Ethiopian Landrace variety. On our trips to Colombia, we've seen the variety proliferate across Colombia, particularly in Huila, where it has become extremely popular amongst specialty focused coffee producers.
Washed
Lubier processes his coffee in a simple but careful way. Upon harvesting, the cherries are left to ferment in the hopper for 30 hours, after which they are de-pulped and placed in tanks of submerged in water to ferment for an additional 75 hours. The parchment is then washed and left to dry in raised beds for around 12 – 15 days, depending on the weather.
