Francy Castillo oversees the Berruecos Project, which brings together cherries from small-scale female producers at her collection point. This project connects remote producers to the specialty coffee market, allowing them to earn premium prices. The initiative focuses on supporting women coffee producers in Nariño through farm visits to assess community needs, providing technical assistance on specialty coffee practices, and offering tools and resources for daily fieldwork. As it happens, the women of the Berruecos Project have produced the best decaf lot we’ve ever had the pleasure of roasting.

Nariño

Nariño is characterized by steep slopes, and extremely high altitudes as well as a unique climate. Warm, humid air makes its way up from the valleys during the evening hours, allowing for coffee to be grown at higher altitudes than in the rest of Colombia, without risk of frost. The volcanic soil is rich in nutrients and is well-drained..

Washed

Each woman producer in this blend follows a two-step fermentation process to ensure high-quality beans. Cherries are hand-harvested at peak ripeness and sorted using the flotationmethod to remove damaged cherries .The first fermentation stage lasts 70 hours while the cherries remain intact, followed by natural pulping. A second fermentation, lasting 60 to 70 hours in closed tanks, further develops the flavor. After drying on tarps or concrete patios for 14 to 18 days, the beans are stored in sacks and transferred for decaffeination.
