Process: Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry overnight. De-pulped. Dry-fermented for 36 hours. Washed. Dried on raised beds until moisture content reaches 10.5%.

This is our first release from Victor Chala, an inspiring producer growing Pink Bourbon in southern Huila. We are excited to include his coffee in our selections this season, and look forward to visiting his farm on our next trip to Colombia. In the cup we find rose tea, orange zest, and elderberry.
ABOUT VICTOR CHALA
This lot from Victor Chala is another new coffee from Huila for us. Victor is an inspiring younger producer with exceptional potential. A second-generation coffee grower, he grew up working on his parents’ farm before purchasing his own land about 14 years ago at excellent elevation, with the goal of entering the specialty market. He has since planted Pink Bourbon, Chiroso, Caturra, and Sidra—varieties we hope to taste as separate lots in the future.
ABOUT PINK BOURBON
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
