Process: Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry overnight. De-pulped. Dry-fermented for 50 hours. Washed. Dried on raised beds until moisture content reaches 10.5%.

This is our first year working with producer Jhonatan Pito. We discovered this coffee when its clarity and expression leapt off one of our buying tables. In the cup we find excellent structure, tangerine, honey, and blueberry.

This coffee comes to us through a completely new supply channel. As our exploration of Huila deepens, we are diversifying our sourcing networks to gain better access to new coffees and producers. While quality will always fluctuate year to year, we remain committed to the incredible potential of southern Huila—and to celebrating the seasonal diversity that makes each harvest unique.
ABOUT PINK BOURBON
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
