Process: Hand-picked at peak ripeness. Floated to further remove defects. Held in cherry for 24 hours. De-pulped, then dry-fermented in parchment for an additional 48 hours. Washed. Dried on raised beds for 20-25 days.

This is our first year tasting and purchasing coffee from Eduar Moriones Garcia. It is always exciting to work with a coffee for the first time—especially from Huila. In the cup we find ripe red fruit, lemon zest, and excellent structure.
ABOUT EDUAR MORIONES GARCIA
This is our first year working with coffee from Eduar Moriones. We have been sourcing coffee in Huila for many years and have explored the region’s profiles more extensively than perhaps any other. That is why it is always so exciting to discover new producers whose coffees we have never tasted or worked with before. Coffee remains an endless exploration—one we will never tire of.
ABOUT PINK BOURBON
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
