PRODIGAL - Flor de Cielo | Colombia - Washed - Pink Bourbon

La Suma natural pink bourbon was one of our favorite coffees from this past springtime, and now we have the pleasure of offering a washed version from the same farm. This "Flor de Cielo" is Finca La Suma's ultra-clean washed offering. This immaculate coffee tastes of mandarin orange, with subtle flavors of mango and berries. 

Fernando Zuñiga inherited Finca La Suma from his parents, a small farm surrounded by natural forest reserve. His parents cultivated caturra and castillo varieties, and now Fernando has added pink bourbon. To conserve their limited water supply. After significant training in post-harvest practices, fertilization, and water management, Fernando and his wife are eager to grow La Suma and their offerings.

Only ripe coffee cherries were picked and then floated to sort by density. The coffee was fully washed and then dried for 20-24 days under canopies.
