This Geisha is vibrant and expressive, with bright floral aromatics and juicy stone fruit qualities. On each sip, look for delicate notes of peach, sweet orange blossom, and zesty mandarin, all layered over a clean, elegant structure.

Iris Estate is a high-altitude Geisha-focused farm in the Volcán region of Chiriquí, Panama, on the colder western slopes of Volcán Barú, ranging from 1,850 to over 2,300 metres above sea level. Directed by Jamison Savage in collaboration with Sasa Sestic and Elvin Siew, the estate was conceived as a research-driven farm where altitude, forest environment, genetics, and fermentation form an integrated quality system. Planted predominantly to Geisha, the farm focuses on translating Volcán’s cold, slow-maturing environment into floral clarity, layered complexity, and exceptional structure.

The Elipse lot is produced using a hybrid Nitrogen Macerated Washed process developed within the Savage methodology and refined at Finca Deborah. Ripe Geisha cherries, harvested at strict ripeness targets of 20–22 Brix, are carefully sorted and placed into sealed nitrogen tanks, where oxygen is displaced to allow controlled fermentation and in-cherry maceration for around 100 hours. After this stage, cherries are pulped, fully washed to remove remaining mucilage, and slow-dried on raised beds or controlled drying systems. Extended drying preserves cellular structure and aromatic clarity, producing a coffee defined by clean structural precision, vibrant aromatics, and refined texture—an engineered, repeatable expression of Volcán-grown Geisha.
