Finca Licho, situated in Costa Rica's renowned Central Valley, is a distinguished family estate operated by the Chacón family. With a legacy of multigenerational expertise in coffee cultivation, the Chacón family has earned a reputation for meticulous agronomy and disciplined microlot production. Over the last two decades, they have transitioned from delivering cherries to large cooperative mills to managing their own processing. This shift allows them to isolate varieties, refine fermentation techniques, and create a portfolio of high-value honey and natural lots. This evolution aligns with Costa Rica's micromill movement, empowering small producers to craft distinctive profiles through innovative processing and careful lot separation.

On their higher-elevation parcels, Finca Licho cultivates Sarchimor, a resilient hybrid known for strong production at altitude. When combined with precise post-harvest practices, Sarchimor reveals an expressive sensory profile. In their White Honey lot, only fully ripe cherries are harvested and pulped at the farm’s micromill, leaving a thin layer of mucilage on the parchment. The coffee is then dried slowly on raised beds under controlled airflow, preserving the variety’s inherent sweetness and acidity with minimal fermentation influence. The result is an exceptionally clean and structured honey lot, with elevated florals, delicate fruit notes, and a bright, refined finish, reflecting both the Central Valley's terroir and the Chacón family’s dedication to excellence.
