Yirgacheffe, Ethiopia
Located in the Gedeo Zone of Southern Ethiopia, Yirgacheffe has long been celebrated as one of the world’s premier coffee-growing regions. Its high elevation, dramatic temperature shifts between day and night, and fertile soil produce coffees known for their floral and vibrant flavor profiles.
Processing: Honey Process × Anaerobic Fermentation
While natural processing remains dominant in this region, ORIGIN COUNTRIES has partnered with the Wachota Washing Station this season to develop a honey process approach. The goal is to express the charm of Yirgacheffe while offering something new and distinctive.
Before pulping, cherries are sealed in GrainPro bags and fermented for 72 hours in a near-anaerobic environment. They are then carefully processed using the honey method.
Drying and Quality Control
During drying, the coffee is turned frequently to ensure even moisture distribution. To protect it from overexposure to intense sunlight during the day and potential rain at night, covers are used when necessary, ensuring consistent quality.
