This decaf coffee is made from beans harvested in Sidamo, one of Ethiopia’s most renowned coffee-growing regions and the birthplace of coffee. The beans are exported to Descamex in Mexico for decaffeination.
Founded in 1980, Descamex was the first decaffeination plant established in Latin America. They use a water-based extraction technique known as the Water Process to remove caffeine. Their greatest challenge has always been to preserve the coffee’s original rich flavors and aromas while extracting caffeine. By using pure water—free from chemical solvents—throughout the Water Process, they also aim to create a decaf coffee that is gentle on human health, continuing to research and refine their methods to achieve this goal.
