      Roaster's Comment

      This year’s winter blend, Fuyu Moe, is built around a comforting, layered sweetness, crafted with Guatemala as its base—a flavor we’ve come to associate with winter.

      (The green beans from Guatemala arrive in Japan around November to December every year, so we’ve naturally started calling it our “winter flavor.”)

      The main component is a regional lot from Huehuetenango, Guatemala.
      It brings classic Guatemalan notes of orange, red apple, and nuts, forming the backbone of this seasonal blend.

      To this, we added a naturally processed Ethiopia from the Sidama area, contributing grape and green apple-like flavors that add dimension and lift to the cup.

      Finally, a small portion of naturally processed Guatemala from the Jalapa region introduces a subtle hint of fermentation, adding depth and complexity.

      The result is a coffee with a beautiful transition of flavors—sweet, layered, and gently comforting, perfect for this cold season.
