    This decaf from Ethiopia’s Sidamo region showcases a surprisingly clear sense of terroir—something you wouldn’t normally expect from a decaf coffee.

    In many cases, the decaffeination process strips away much of the coffee’s inherent flavor. However, this Sidamo decaf retains the floral aromatics and stone-fruit character that are naturally derived from its origin and variety.

    It is rare and truly special to come across a decaf coffee of this quality.

    In roasting, we took extra care not to apply excessive heat to the loosened fibers caused by the decaffeination process. By roasting gently with lower heat over a longer time, we avoided underdevelopment while minimizing the distinctive “decaf” aroma. The result is a clean, well-balanced cup that highlights the origin’s character and is a pleasure to drink.

    Coffee from Sidamo, one of Ethiopia’s most renowned coffee-producing regions and the birthplace of coffee itself, has long been cherished by coffee lovers worldwide for its clean profile and floral aroma. This particular coffee is a decaf Ethiopian Sidamo, exported to Mexico and processed by Descamex.

    Founded in 1980, Descamex was the first decaffeination plant established in Latin America and has since been at the forefront of decaf coffee production. The company primarily uses the water-based “Mountain Water Process” for caffeine extraction. Their mission has always been to retain the coffee’s inherent richness and flavor while removing caffeine.

    By using pure water in their process—without the involvement of chemical solvents—Descamex also ensures a decaf option that is health-conscious. Through continuous research, refinement of extraction techniques, and rigorous cupping, their ultimate goal has been to minimize the sensory differences between regular coffee and its decaffeinated counterpart.
