For this year’s Seasonal Blend Natsu Ake, we selected green beans and designed the roasting profile with cold brew in mind.
To start with, we selected green beans that make a flavorful cup even in a lower temperature range. Natural coffees tend to possess suitable flavor elements for such a purpose, so we built the blend with 70% natural and 30% washed African coffee to add the blend a body and floral feel.
For the roasting profile, we opted for a longer and a slightly deeper roasting time so that the sweetness comes out well also in an immersion extraction. This contributed to the deep, browned caramel-like flavor.
This Natsu Ake is a little more intense compared to other seasonal blends of ours, and for pour over it is best to brew it at a slightly lower temperature than you would normally do.
