 Submerged Washed

The cherries are hand-collected at peak ripeness and then carefully hand-selected. They then undergo an anaerobic process in which the cherries are pulped and “dry fermented” for 42 hours in closed GrainPro bags submerged in spring water, before being fully hand-washed with fresh mountain spring water. After washing, the coffee is dried on raised beds for 15 days.

José Luttrell is the producer behind Abu Coffee, a family-owned project in the Cañas Verdes region of Boquete, Panama. The farm is named in honor of José’s grandmother, nicknamed “Abu,” who instilled in the family a deep respect for nature and community. Inspired by this legacy, José has focused on creating a boutique coffee project centered on sustainability, innovation, and exceptional quality.

Abu Coffee has quickly risen to prominence in the specialty coffee world, earning recognition at competitions such as the Best of Panama. José’s meticulous approach combines traditional practices—like careful cherry selection and raised-bed drying—with modern processing methods that bring out the Gesha variety’s elegance. His farm’s location, at 1,550 meters on the slopes of Boquete, benefits from rich volcanic soils, cool mountain air, and abundant spring water, providing the perfect terroir for Gesha.
