“Over the past few years, Aroma Nativo has been building connections between undiscovered Colombian coffee farmers and well-known roasters from around the world.
In 2022, Luis Marcelino, the founder of Aroma Nativo, takes it a step further by launching the Veci Project: it's a collaborative coffee production initiative between coffee producers who have good agronomic practices but lack the infrastructure on the farm to process their coffee. Aroma Nativo contributes by purchasing their coffee cherries at a high price and using its fermentation knowledge and processing facilities located in Pitalito, Huila.”
After hand-picking the ripest cherries, this Caturra Mejorado variety went through whole cherry fermentation stage in an anaerobic environment. It was then pulped and a secondary fermentation was done in sealed barrels with lactic bacteria inoculated from a previous Geisha fermentation. It is then dried for 20 days on raised beds, followed by 2 months stabilization phase in a temperature controlled environment to ensure optimal conditions to preserve quality and enhance durability.
