From ETHICA
Meet our 2nd release of the year from Ture Waji: an expressive, refined natural bursting with strawberry and tropical fruit flavors, rounded out by a luscious, dessert-like milk‑tea finish.
TURE WAJI, AND SOOKOO COFFE
Sookoo Coffee was started in 2018 by brothers Ture Waji and Assefa and quickly became a beloved name in Guji. Based in Odo Shakiso, they work closely with smallholders across nearby kebeles so each lot captures its own local character. This Shoondhisa lot features Gibirinna 74110 and Serto 74112 — varieties selected for disease resistance by the Jimma Agricultural Research Center. The cherries are naturally dried on raised beds to lock in Guji’s bright, layered flavors. Every cup tastes like the care and community behind the beans.
THE VARIETY - Gibirinna 74110 and Serto 74112
Selected in 1974 by the Jimma Agricultural Research Center (JARC) for resistance to coffee berry disease, 74110 and 74112 are significant Ethiopian coffee varieties. 74110 is a locally selected Ethiopian Heirloom subvariety from Oromia's Bishari village, featuring short, compact trees with small leaves and cherries. 74112 comes from the Metu Bishari selections found in the Illubabor Zone of western Ethiopia.
