This highly innovative lot from Finca Milan in the Risaralda region of Colombia showcases the "Nitro" processing method developed by Julio Madrid. The Castillo cherries undergo a complex yeast fermentation involving the addition of fresh pineapple, lychee, and local aromatic plants before being finished as a washed coffee. This unique co-fermentation leans into the herbal and citrus side of the spectrum, resulting in a vibrant, layered cup defined by refreshing notes of eucalyptus and lemongrass with a delicate floral finish.
