Neyver Salas Quispe is a rising star in the world of speciality coffee. At just 18, Neyver took over his grandparents’ farm in Cajamarca, Peru, and decided to dedicate himself to producing exceptional coffee. Over the past six years, Neyver has worked tirelessly, reinvested in the farm’s infrastructure, supported his family, and diversified income streams by opening a bakery with his cousin.

This year, we had the privilege of visiting Neyver for the first time. His focus on quality is evident in every step of his process, and his ambition to one day win the Cup of Excellence reflects his commitment to excellence. We’re excited to feature his washed Geisha coffee, exclusively for our wholesale partners, which showcases a clean and aromatic flavour profile with floral notes and a winy acidity.

Post harvest processing

Harvesting begins with selective hand-picking to ensure only the ripest cherries are used. The cherries are rested for 12 hours before they are sorted from defects. Following this, they are pulped and fermented in sealed containers for up to 48 hours.

Once fermentation is complete, the coffee is washed three times and dried on raised beds for approximately 10 days until the coffee reaches 10–11% moisture level. Thanks to upgrades like stainless steel surfaces and a large drying facility, Neyver has raised the bar on his processing methods.
