A balanced and clean filter coffee with a complex fruit character and medium acidity. Expect notes of cocoa, honey and apricot.
This is our 6th year partnering with the Enciso family and their family-run farm in Tolima. With their holistic farming techniques, biodiverse terroir, and a mix of Caturra and Colombia varieties, Enciso expresses a more fruit-forward cup compared to the slightly more balanced and structured Colombian coffees we source from the Huila region. In some ways, we believe it's a unique coffee that offers the best of "both" worlds, presenting complex fruit qualities within a balanced and rich structure.
We have developed a unique filter roast profile for Enciso that helps lift the aromas of the cup while keeping it on the balanced side. On filter brew, expect a transparent cup with a light acidity, while the Aeropress facilitates a wonderfully creamy experience.
Cherries are picked and washed on-site at the Enciso family wet mill before drying on shaded parabolic beds for up to 30 days. The slower drying rate facilitated by parabolic drying beds allows more accuracy and consistency in the drying process, resulting in a higher quality coffee.
