This Anaerobic Natural variety from Bekele Kachara’s farm is located at a remarkable 2,350 masl. The fields were only planted four years ago, and the area wasn’t originally considered suitable for coffee farming. However, the rise in temperatures and new coffee varieties have made it possible to produce coffee in these highlands, where cooler temperatures and nutrient-rich volcanic soil create ideal conditions for cultivating this unique and complex coffee.
Post harvest processing
Once the Kurume 74-158 cherries are ripe, they undergo 48 hours of anaerobic fermentation, followed by drying for up to 24 days. Under usual conditions, this could lead to moldy flavors, but due to the low oxygen levels at this altitude, it doesn’t happen here. The farm operates without electricity or water, making this coffee fully natural.
