◉ Processing Method | Oak Barrel Anaerobic Honey
At MOUNTAIN MOVER, we're constantly exploring new processing methods. One of our latest experiments is this Oak Barrel Anaerobic Honey process.
Fresh coffee cherries are placed into oak barrels previously used by winemakers, where they undergo fermentation. Inside the barrels, native microorganisms interact with the cherries, creating a fermentation environment similar to anaerobic conditions.
Staying true to their philosophy, MOUNTAIN MOVER allows natural yeasts and microbes to do the work—resulting in a coffee with complex and exciting flavors reminiscent of white wine, pineapple, and yogurt.
Yunnan Province
Yunnan Province is located on the southwestern frontier of China and is home to the largest ethnic minority population in the country. Bordered by Vietnam, Laos, and Myanmar in the south, the average altitude is around 1500-2200 m above sea level, and in the northwest by the Tibet Autonomous Region, the average altitude is between 3000-4000 m above sea level. Overall, the topography is complex, with large temperature differences between day and night, and the climate is diverse, resulting in a very rich flora and fauna, the largest number in the country.
