This coffee comes from Ture Waji, the founder of Sookoo Coffee. It is processed at the Bookkisa station, where cherries are gathered from local smallholders at elevations ranging from 2000 to 2150 MASL. Expect a flavorful and impressively clean natural coffee that Ture has become famous for. We find notes of mixed berries, floral honey and strawberry cream.
Ture Waji, often referred to as "The King of Guji," is not only an outstanding producer but also a passionate and kind individual we've had the pleasure of meeting numerous times over the years. He is renowned for consistently producing some of the nation's cleanest natural coffees. The producers who contribute to this lot manage small parcels of land entirely organically. Each farm is roughly 1-2 hectares, with coffee planted in fully or semi-forested systems. This is our second release from Bookkisa this season  after sharing the washed counterpart earlier this season.
Cherries are collected at peak ripeness. Once sorted they are moved directly to drying tables where they are dried on raised beds in cherry for 21-28 daysThis coffee comes from Ture Waji, the founder of Sookoo Coffee.
