When it comes to "coffee that surprises," there’s no one that tops this.

 The Colombia Jardines del Edén Passionfruit Honey, a yearly favorite and now a flagship for LiLo Coffee, is back again!

This beans is an "infused coffee," where passionfruit pulp is added during the fermentation process. The harvested cherries are placed in plastic tanks along with the passionfruit pulp, and anaerobic fermentation takes place. The timing of when the fruit is added is adjusted based on the weather and the fermentation's progress, making each batch unique.

The key to this process is determining the right level of fermentation. If the fermentation is too weak, the desired flavors won’t emerge, but if overdone, the coffee becomes over-fermented. This makes infused coffee a delicate and challenging process. However, when done correctly, the result is a beautifully impactful flavor that leaves a lasting impression on many.

Even in various producing countries, the infused coffee process is still experimental, with producers taking on the challenge and learning from each failure.

One of the key factors behind the creation of this processing method is the impact of climate change, which has made it increasingly difficult to produce washed coffees as before. In this challenging environment, producers are determined not to let any of their carefully cultivated coffee go to waste. Driven by this mindset, they have experimented and innovated, turning a negative situation into something positive, leading to the development of infused coffee.

At the time, most coffee in Colombia was processed using the washed method. However, Cofinet began producing crops that surprised roasters around the world by specializing in beans processed using unique fermentation process.

Additionally, the company took on all post-harvest processes, significantly reducing the burden on farmers and allowing them to focus solely on producing high-quality, fully ripe cherries. Thanks to this support, the farmers working with Cofinet not only improved the quality of their cherries but also increased their income, enabling them to engage more actively in sustainable coffee cultivation.
