Explosion of Orange Flavor; Orange Soda Mandarin Washed
Castillo has been grown extensively in our farm, experienced and rigorous pickers would only hand-pick mature Castillo. We intentionally remain a certain level of mucilage after depulping, and then put them together with crushed fresh oranges for fermentation. Oranges of course were to give coffee the fascinating flavor and fragrant of mandarin, while the mucilage helps to maintain the sweetness of the coffee bean.

"Mandarin or tangerine has always been a very important and amazing flavour in specialty coffee, our adventurous processing has made the flavour perfectly blended in the whole cup profile. With the little details during the processing trying to maximize the sweetness, this has resulted a very balanced acidity and sweetness cup profile. You could find a richly aromatic, juicy vibrant mandarin acidity balancing with refreshing sweetness, and a lingering finish in the quality cup."
