The fruity richness of blackberry intertwines with the juicy sweetness of red grape, while chocolate brings a gourmet and velvety depth. A harmonious and refined cup, between intensity and sweetness.

Karamo Washing Station

Karamo village is nestled in the Sidama region, more precisely in Bura Woreda, at a remarkable altitude. This high altitude location results in a slower ripening of coffee cherries, which pushes back the harvest season compared to other regions and gives the beans a particularly complex flavor.

Around 350 small farmers, whose farms cover an average of 2.5 hectares, supply their cherries to the village washing station. Depending on the location of their farms, producers bring their harvests directly to collection points or stations.

After careful sorting, the ripe cherries are transported to drying sheds where they are regularly turned by hand to prevent deterioration or excessive fermentation. During the peak harvest season, the cherries arrive almost daily. They are then distributed to different beds according to their dryness level. Once their moisture content has been reduced to around 11%, they are collected and taken to a dry mill. The remaining pulp is then stored, waiting to be processed into green beans once a buyer has been found.

The batch of coffee we are offering here comes from the JARC 74158 variety, one of the forty varieties developed by the Jimma Agricultural Research Center (JARC). These varieties have been designed to improve resistance to diseases and fungi, while promoting optimal cultivation and growth.
