From KAWA
A coffee with great aromatic richness, revealing subtle and refined notes of cocoa, blood orange and vanilla.
This coffee from the Valle de la Cauca is a unique variety from the large Colombian farm Granja La Esperanza and more precisely the Hawaii farm. The farm is located at an altitude of over 1500m and is considered one of the pioneers of specialty coffee in Colombia.
Granja La Esperanza has a perfect mastery of coffee fermentation. This variety has been dried naturally for 15 days in patios under controlled humidity.
This variety, which is several hundred years old, is a mutation of a Bourbon, and was named after the Port of Moka in Yemen. It was imported to Brazil in the 1900s and then mutated with a Typica in order to increase its productivity. Its small grains attract attention and are very characteristic of this variety. The Granja farm uses this famous mutation with the Typica, which is also called “Tall Mokka” or “Maui Mokka”.
