From ilse
This exceptional Gesha selection comes from Hacienda Las Lagunas, one of two farms owned by the Janson Family in Panama’s Talamanca mountain range. Grown at an altitude of 1,400 MASL, this lot was harvested on January 20, 2024. Our second release from Janson this year - this lot is very crisp and floral with notes of butterscotch, honeysuckle and bergamot. We are finding flavors of stone fruits like white peach and apricot along with orange and white tea.
The Janson Family has been producing some of the world’s finest coffees since transitioning from a cattle farm in 1989. Their coffees are regularly featured in barista competitions globally and consistently rank among the top in the Best of Panama competition. We’re excited to feature their coffees, which often display a beautiful balance of citrus and floral notes, along with deep layers of complexity. This lot is the first of three from the Janson farms that we’ll be offering this season.
Cherries are collected at peak ripeness. Once sorted they are depulped and the seeds are fermented for 48 hours. Following this stage the seeds are rinsed thoroughly and moved to the patio to dry until the optimal moisture content is reached.
