From ilse

This coffee is sourced from the Buncho washing station in the village of Shantawene, located in Besna, Sidama. At an elevation of 1900-2,020 MASL, around 800 local smallholder farmers contribute their cherries to create this lot. The primary variety delivered is Heirloom 74158. We find Honey processed coffees from Sidama to be among our favorites. You’ll find electric citrus notes as well as ripe stone fruits such as apricot, nectarine, and lychee.

Buncho is managed by Asefa Dukamo Korma of Daye Bensa, who are also the exporters for this and many of our other lots from Sidama. This site gained global recognition after placing 2nd and 3rd in the inaugural Ethiopian Cup of Excellence in 2020. Coffee here is grown at some of the highest elevations in the world, producing some of our favorite flavor profiles.

Cherries are collected at peak ripeness. Once sorted they are depulped and density sorted. The seeds are then dried in mucilage for 10-14 days.
