A minimal fermentation washed process Geisha from El Paraiso.
The coffee cherries are first demucilaged and quickly cooled to minimize fermentation. The mixture is then put in a rotating tank and undergoes a proprietary, yet simple and elegant, process to halt fermentation, increase contact between coffee and mucilage, and maximize the absorption of mucilage into the internal structure of the coffee seed.
