Located in the heart of Ethiopia’s renowned Sidama region, Bekele operates several small coffee processing sites. Among them, the one we are collaborating with is particularly special - situated at a remarkable 2,350 meters above sea level in the Murago area.
This site, the highest of Bekele’s operations, benefits from the unique microclimate provided by such an elevation. The cool temperatures and rich volcanic soil create ideal conditions for cultivating one of our most anticipated partnerships of this year.
This year marks our first collaboration with Bekele, and our co-founders, Casper and Peter, had the privilege of visiting his farm to see firsthand the meticulous care and attention that goes into every stage of his coffee production.
Post-harvest Processing
Once harvested, the cherries undergo natural processing, where they are spread out on raised drying beds and exposed to the sun. This method allows the cherries to dry slowly and evenly, a process that is carefully monitored to maintain consistent quality.
The high altitude and cooler temperatures of the Murago area extend the drying period, which can last several weeks. This slow drying process enhances the beans' sweetness and complexity, resulting in a final product that is rich in fruity and floral notes, with a distinct brightness and clean finish characteristic of high-altitude Ethiopian coffees.
