Degassing:
We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark. Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.

This pacamara is without a doubt one of the best coffees we've tried this year. Blowing most geishas out of the water during Corpachi's 2024 harvest, garnering an SCA score of 91+. Incredibly sweet throughout, with lychee and ripe mango-like juiciness and succulent sweetness at the start, developing into honeydew and banana, with a perfumed violet florality. An incredible coffee through and through, if you like big intense flavors and are a fan of fermentation, this coffee is for you. We might as well have named this one Mango Hi-Chew.
